A Very Good Spanish Bizcocho Recipe

One of my favorite pastries in Spain is the simple bizcocho. It is a plain simple cake, flavored with lemon zest, but it's really good and not too sweet like American desserts. It has a crunchy exterior (probably because it's baked at a high temperature of 400 Fahrenheit).

I found this recipe online from the Joy of Spanish Baking and it was so good! Technically for magdalenas, which I also love, but I baked it in a cake pan and it turned out beautifully.

Side note: in the US it's common to put vanilla extract in a lot of desserts. vanilla is sort of the default setting for desserts, whereas in Spain there are a lot of different flavors like turron and crema and nougat. vanilla is its own special flavor, as it should be. a good vanilla dessert is sublime.
